🍷 Venison Steaks with Juniper & Red Wine

 

You’ll need:

  • 2 venison haunch steaks

  • Juniper berries, garlic, rosemary

  • Red wine & stock for sauce

Method:

  1. Marinate steaks in crushed juniper, garlic & oil (2 hrs)

  2. Sear in hot pan, 2–3 mins per side

  3. Deglaze with red wine, add stock, reduce into sauce

  4. Serve with celeriac mash or roasted beetroot

You’ll need:

  • 1 pheasant (jointed or boned)

  • Apples, onions, cider, thyme, cream

Method:

  1. Brown pheasant in butter

  2. Add onions, sliced apples, thyme

  3. Pour over cider, cover, and simmer 1 hour

  4. Stir in cream just before serving
