Sunday Roast Remix: Lamb Neck Steaks with Mint Pesto
Looking for a tender, budget-friendly alternative to lamb chops? Lamb neck steaks are the underrated hero of the butcher’s counter.
🛒 Ingredients (Serves 2–3):

2–3 lamb neck steaks

1 tbsp olive oil

Salt & black pepper
For the pesto:

1 bunch mint
-
1 handful parsley
-
1 tbsp lemon juice
-
2 tbsp olive oil
-
1 tsp Dijon mustard

Salt to taste
🔥 Method:

Sear the steaks:
Season well. Sear both sides in a hot pan until browned.

Slow cook:
Transfer to a dish with a splash of water or stock. Cover and roast at 160°C for 2 hours until tender.

Make the pesto:
Blend all ingredients until smooth. Taste and adjust salt/lemon.

Serve:
Plate lamb steaks with a generous drizzle of pesto.
