Sunday Roast Remix: Lamb Neck Steaks with Mint Pesto

Looking for a tender, budget-friendly alternative to lamb chops? Lamb neck steaks are the underrated hero of the butcher’s counter.

🛒 Ingredients (Serves 2–3):

  • 2–3 lamb neck steaks

  • 1 tbsp olive oil

  • Salt & black pepper

 

For the pesto:

  • 1 bunch mint

  • 1 handful parsley

  • 1 tbsp lemon juice

  • 2 tbsp olive oil

  • 1 tsp Dijon mustard

  • Salt to taste

 

🔥 Method:

  1. Sear the steaks:

    Season well. Sear both sides in a hot pan until browned.

  2. Slow cook:

    Transfer to a dish with a splash of water or stock. Cover and roast at 160°C for 2 hours until tender.

  3. Make the pesto:

    Blend all ingredients until smooth. Taste and adjust salt/lemon.

  4. Serve:

    Plate lamb steaks with a generous drizzle of pesto.

  • Crispy potatoes

  • Braised greens

  • Crusty bread

Lamb neck steaks are packed with flavour and ideal for slow braising. Ask us to cut them thick for roasts or thin for grill-pan searing.
